Since my sock knitting is mostly for me and my dad -- two dudes with big feet -- I'm *always* playing yarn chicken, and I always wish the legs could be taller. Using a contrasting color for heels (and toes and cuffs) is what I'm going to start doing to give me more buffer. I've rolled around ideas in my head about how to do the heel, but it always involved breaking the MC yarn, which I didn't want to do. Or, if I didn't break the MC yarn, I'd be picking up the MC in weird places for the foot.
